The first 8 is the yeast: the rare #8 strain that produces a delicious acidity. The use of No. 8 yeast is very unique as it is a strain which has all but disappeared in Sake production today. 

The second 8 is the polishing ration: keeping 80% of the grain to add viscosity and draw maximum flavour from the organic rice that Akishika grows themselves.

The third 8 is Japanese for the "Ha" of Hattan Nishiki, the rice strain that imparts a subtle bitterness to the brew. 

What you can expect:

A complex and layered sake that offers great texture with bright acidity and warm spices. Long, complex finish. Serve chilled or warmed to 40°C.
