Fresh deep-sea smelt, also known as Okinawan Kisu, caught off the coast of the Tango Peninsula, Kyoto, are canned in oil.
Delicately salted, these lean white-fleshed fishes have firmer texture than the rainbow smelts. Flavours are robust - very savoury but balanced. The spines can be seen but not perceivable on the tongue.
