Fresh Japanese sandfish caught off the Sea of Japan coast are carefully salted and canned in cottonseed oil.
Delicate, flaky texture with small, tender flakes. Firm yet yielding—never tough. The bones dissolve instantly on the tongue. The traditional salting process makes this slightly more heavily seasoned than other tins from Takenaka but not in any way salty. Savour the umami and oceanic depth. Great on its own paired with rice or pasta.
