The #7 is made from Omachi rice organically grown by Akishika brewery. This Yamahai (traditional yeast starter) sake is polished to 70% and shows a rich, complex and vibrant character. Fresh on the palate, this Nama(unpasteurised) sake has a layered and textural character that showcases the skill of the brewer. Simply delicious!
What you can expect:
Aroma of aged wheat, chestnut and cacao. Mild pleasing nuttiness and bitterness on the palate. Try it warm (you can heat it up with double boiler, or simply in microwave oven) for a greater depth of flavour.
This sake ages gracefully, typically develops a savoury depth with time.
