Amanohashidate - Japanese Anchovies in Oil

These tiny fishes have firm textured flesh that crumbles on the tongue when pressed against the roof of mouth. They have stronger flavours compared with the smelts - not fishy, but full flavours of fish. There is mild bitterness from the guts, a real treat for fish connoisseurs.
