The slender, translucent Niji Wakasagi, also known as Rainbow Smelt has white flesh with a mild, clean flavour. It is lightly seasoned with salt and marinated in cottonseed oil with bay leaves. You will be amazed how many fishes are packed into this tin!
It can be enjoyed as is, or in a variety of other dishes such as a Yanagawa-style dish where it is quickly simmered with burdock root in a sweet and spicy broth and then covered in egg. For a simple snack to pair with sake, we recommend Yuzu koshō (Yuzu pepper) or hot sauce to dip these little fishes with.
