Kumihama Bay in the outskirts of Kyoto is an excellent place for oyster farming. With forested hills along parts of the bay, the nutrient-rich run-offs create an environment ideal for planktons which the oysters feed.

These juicy seasonal oysters are boiled, smoked, and marinated in oil. They are the perfect accompaniment to sake.
